Our Story

From an Amarillo porch to a Denver corner.

Just Gimmie Dat Cuisine is what happens when family recipes meet a city that's been waitin' on ‘em.

Just Gimmie Dat Cuisine food truck

Just Gimmie Dat Cuisine started in Amarillo, up in the Texas Panhandle, where the porch was the kitchen, the kitchen was the living room, and the living room was always full. Sundays meant a pot of pinto beans bubbling since dawn, oxtails that had been on the stove longer than most folks had been awake, and a cast-iron skillet that never really cooled down.

The story moved on, chasin' mountain air and a fresh start. We found both. What we didn't find was a proper plate of soul food — not the corner-store kind, not the trendy “Southern-inspired” kind. The real thing. The kind that takes all day, tastes like Sunday, and makes you call your grandma to tell her about it.

So we did what any reasonable person would do: built a truck. Painted it black. Put gold lettering on the side. Loaded it up with the recipes Grandma scratched onto index cards back in ‘72, and took it to the people. One plate at a time, one corner at a time, one happy face at a time.

That's the whole thing. No gimmicks. No reinvention. Just soul food made the way it's always been made — with time, with care, and with a whole lot of seasoning.
